There are any numbers of outfits in Belize that will take you horseback riding, but we did ours in the San Ignacio area and had a delightful time. We rode to Xunantunich, traveling along fields and wooded areas beside the water, and it was quite the experience crossing the Mopan River via a hand crank bridge/ferry while sitting on a horse. On the way back, we stopped in a lovely field beside the river for a picnic and a dip in the river. Horses + ruins + picnic + swimming? Sounds good to me!
